- 2 1/2 extra ripe mangos
- 1 cup coconut milk
- 1/3 cup honey
- 1 tsp vanilla extract
Pick your fruit. This recipe is based on mangos but you can choose any fruit you like (peaches, plums, strawberries... just experiment). Make sure your fruits are extra ripe so you get maximum flavor.
Cut your mangos into cubes and freeze for at least 6 hours or overnight.
Take the fruits out of the freezer and blend them in a blender or food processor with the coconut milk, honey, and vanilla extract.
Blend until smooth. Add honey to taste. Serve immediately or scoop into a lined tin or ice cream container and freeze until firm.
