Ingredients (makes 12 madeleines)
- 1/2 cup all-purpose flour, sifted
- 1/2 tsp baking powder, sifted
- 1/3 cup confectioners sugar
- 1 tsp dried lavender
- 2 eggs
- 80g unsalted butter melted
- 1 tbsp honey
- 1 tsp vanilla extract
Preheat oven to 180°C. Butter your madeleine pan, dust with flour and shake out the excess.
In a bowl, stir together the flour, baking powder, sugar, lavender, eggs, butter, honey and vanilla, and whisk until smooth. Spoon the mixture into the holes of your buttered madeleine tin. Cook for 8-10 minutes or until puffed and golden.
Remove the madeleines from the tin and dust them with sugar. Set aside to cool before serving.
