- 4 bananas
- 15 cl whipping cream
- 3 egg yolks
- 70 g speculoos or lotus biscuits
- 60 g brown sugar
- 15 g butter
Preheat your oven to 180°C. Peal your bananas and slice them into medium thickness pieces. Place your bananas in a non-stick frying pan with 15 g of butter and stir them over medium heat until they soften and slightly change color. Place them in your serving dish.
Crush your lotus biscuits until you get a nice crumbly powder. Mix 50 g of that powder with the whipping cream, the brown sugar, and the egg yolks. Stir together until properly combined.
Pour this mixture into your serving dish, on top of the bananas. Sprinkle with the rest of the lotus powder.
Place your dish in the oven and bake for 20 min. Let your pudding cool down until just warm, and serve immediately.
